Simple and Healthy - Lentil Ragu Recipe

A super simple and deliciously comforting vegetarian alternative to spaghetti bolognese. The leftovers taste even better the day after and the dish freezes beautifully. Why not cook up a large batch by adjusting the ingredient amounts to provide no-fuss, healthy midweek meals.

Super simple lentil ragu recipe

Lentil Ragu with Tagliatelle:

Serves 2,
Low kcal, Low fat, Low sat fat, Low sugar

Ingredients:

- 1 onion chopped
- l large carrot coarsely grated
- 1 vegetable stock cube crumbled
- 2 garlic cloves crushed and chopped
- 100g dried red lentils (I didn't soak mine)
- 400g can of chopped tomatoes
- 2 tbsp tomato puree
- 1 tsp dried thyme
- 200ml boiling water
- Salt and pepper
- tagliatelle (cooked to packet instructions)

Method:

1. Add the grated carrot, diced onion and crushed garlic to a large saucepan with the chopped tomatoes, tomato puree, thyme, lentils and the boiling water.

2. Stir the ingredients together and allow the sauce to simmer for 45 minutes, stirring occasionally to prevent the sauce from sticking to the bottom of the pan. Add more boiling water if required.

3. Season and serve with the pasta.
