I normally use my Sundays to catch up on missed TV programs, sponsored by several cups of tea, comfy PJs and the cat curled up next to me. However, today I had an urge to be a bit more productive and decided to prepare some meals for the week ahead. Hopefully this means that my weekday evenings after work can be a bit more leisurely and Sunday-like, yippee!
At the top of the list were these blackberry and apple overnight oats that I'm sharing the recipe for. I'm a sucker for skipping breakfast and I really do dislike myself for it. I know how much better I feel during the day after a good breakfast, however, I'd rather spend a few more minutes in bed hitting the snooze button rather than giving myself the time to prepare a nourishing meal. Hence the need for today's preparation.
The recipe calls for an essential ingredient, blackberries! which meant I could spend the morning in the fresh autumn air scavenging for the delicious fruit. What better way is there to celebrate the new season?
So here's my recipe for Apple & Blackberry Overnight Oats:
Ingredients: Serves 4
4 eating apples (I used Braeburn)
100g blackberries (can be from frozen, freshly picked or anything in-between)
150g rolled oats
400g fat free natural yoghurt
1 tbsp honey
Method:
1. Peel, core and roughly chop the apples then place them in a large pan with the blackberries and add 1 tbsp of water. Cook gently over a medium heat stirring occasionally, Add an additional tablespoon of water if the fruit starts to stick to the bottom of the pan. Once the fruit has softened set aside to cool.
2. Mix together the fat free natural yoghurt and honey.
3. Start layering up the fruit, oats and yoghurt into a glass or a jar. Repeat the layering process until you have 2 layers of each.
4. Cover the servings with clingfilm and leave in the refrigerator overnight. When morning comes grab your oats, mix all the layers together and enjoy.
